Description

This strawberry feta salad is fresh, sweet, and ready in minutes. Made with juicy strawberries, creamy feta, and a light dressing, it’s perfect for summer meals or quick dinners.


Ingredients

6 cups mixed greens
2 cups strawberries (sliced)
1 cup feta cheese (crumbled)
1/2 cup pecans (toasted)
1/4 cup red onion (sliced)
1/4 cup fresh mint
1/4 cup olive oil
2 tbsp balsamic vinegar
1 tbsp honey
1/2 tsp Dijon mustard
1/4 tsp salt
1/8 tsp black pepper


Instructions

1. Preheat oven to 350°F and toast pecans for 5–7 minutes.
2. Wash and dry the greens thoroughly.
3. Slice strawberries and red onion.
4. Whisk olive oil, balsamic vinegar, honey, mustard, salt, and pepper.
5. Combine greens, strawberries, pecans, feta, and onion in a bowl.
6. Drizzle dressing and toss gently.
7. Serve immediately.

Notes

Use fresh, ripe strawberries for the best flavor. Assemble just before serving to keep the salad crisp. You can add grilled chicken or avocado for a heartier meal.
