Description

These spicy garlic dill pickles are crisp, tangy, and packed with bold flavor from fresh garlic, dill, and chili peppers. Perfect for snacking, sandwiches, or adding a crunchy kick to your favorite meals.


Ingredients

🟡 Groupe 1 → Pickling Spice
2 tablespoons black peppercorns
2 tablespoons mustard seeds
2 tablespoons coriander seeds
2 tablespoons dill seed
1 tablespoon allspice berries
1 teaspoon crushed red pepper flakes
10–12 bay leaves, crumbled

🟡 Groupe 2 → Pickles
10–12 pounds pickling cucumbers
2 cups apple cider vinegar
2 cups white vinegar
4 cups water
5 tablespoons pickling salt
2–3 tablespoons pickling spice per jar
2–3 dill sprigs per jar
2–3 Thai chili peppers per jar
4–5 garlic cloves per jar


Instructions

1. Prepare the pickling spice by mixing all spices in a small bowl.

2. Sterilize mason jars and lids by boiling or using a dishwasher.

3. In a large pot, heat the vinegar, water, and salt until simmering.

4. Add pickling spice, dill, garlic, and chili peppers to each jar.

5. Pack cucumbers tightly into jars.

6. Pour hot brine over cucumbers, leaving about 1/2 inch space.

7. Seal jars with lids and rings.

8. Process jars in a boiling water bath for 10 minutes.

9. Let jars cool completely until sealed.

10. Store in a cool place and wait 7–10 days before eating.

Notes

For extra crunch, use fresh pickling cucumbers and trim the blossom end. Adjust spice level by adding or removing chili peppers. Store sealed jars for up to 1 year or refrigerate after opening.
