Description
These smashed carrots are crispy on the outside, tender inside, and roasted with garlic, paprika, and Parmesan for a simple and flavorful side dish.
Ingredients
1 lb carrots, peeled and sliced into thick rounds
1 tbsp olive oil
2 tbsp grated Parmesan cheese
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt and black pepper to taste
Fresh parsley, chopped
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet.
2. Bring a pot of salted water to a boil and cook carrots for 10–12 minutes until fork-tender.
3. Drain and pat carrots dry thoroughly.
4. Arrange carrots on a baking sheet and gently smash each piece.
5. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper.
6. Sprinkle Parmesan cheese evenly on top.
7. Roast for 20–25 minutes, flipping halfway, until crispy and golden.
8. Remove from oven and garnish with fresh parsley before serving.
Notes
For best results, dry the carrots well before roasting to ensure crispiness. Avoid overcrowding the pan to prevent steaming instead of roasting.
