Description

This peach watermelon salad is fresh, juicy, and refreshing with ripe peaches, sweet watermelon, fresh mint, citrus juice, and cracked black pepper. Perfect for BBQs, picnics, healthy lunches, and summer gatherings.


Ingredients

– 3 ripe peaches, sliced
– 4 cups seedless watermelon, cubed
– 2 tablespoons fresh mint, chopped
– 1 tablespoon lemon or lime juice
– 1 teaspoon extra-virgin olive oil
– cracked black pepper, to taste
– pinch of sea salt


Instructions

1. Slice peaches into wedges or bite-sized pieces.
2. Cut watermelon into cubes and remove seeds if needed.
3. Drain excess watermelon juice if necessary.
4. Chop or tear fresh mint leaves.
5. Combine peaches and watermelon in a large bowl.
6. Sprinkle mint over the fruit.
7. Add sea salt and cracked black pepper.
8. Drizzle with citrus juice and olive oil.
9. Toss gently until evenly coated.
10. Chill for 15–20 minutes before serving if desired.
