Description

Quick one-pan lemon garlic chicken with zucchini, ready in 20 minutes. A healthy, low-carb, high-protein dinner packed with fresh flavor.


Ingredients

Scale
  • 1 1/2 lbs boneless chicken thighs (cut into 1-inch pieces)
  • Sea salt and black pepper (to taste)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 tsp Italian seasoning (divided)
  • 3 tbsp ghee or olive oil (divided)
  • 4 cloves garlic (minced)
  • 4 medium zucchini (sliced)
  • Zest of 1 lemon
  • Juice of 1 lemon


Instructions

  • Cut chicken thighs into 1-inch pieces and pat dry.
  • Season with salt, pepper, onion powder, garlic powder, and 2 tsp Italian seasoning.
  • Heat 2 tbsp oil in a large skillet over medium-high heat.
  • Add chicken in a single layer and cook until browned and fully cooked.
  • Remove chicken and set aside.
  • Add remaining oil to the pan.
  • Add zucchini, season, and cook until just tender.
  • Add garlic and cook for 30 seconds.
  • Return chicken to the skillet.
  • Add lemon zest and juice, stir and heat through.
  • Remove from heat and serve.

Notes

  • Don’t overcrowd the pan to ensure proper browning
  • Add garlic at the end to avoid burning
  • Use chicken thighs for juicier results
