- 1 1/2 lbs boneless chicken thighs (cut into 1-inch pieces)
- Sea salt and black pepper (to taste)
- 1 tsp onion powder
- 1 tsp garlic powder
- 3 tsp Italian seasoning (divided)
- 3 tbsp ghee or olive oil (divided)
- 4 cloves garlic (minced)
- 4 medium zucchini (sliced)
- Zest of 1 lemon
- Juice of 1 lemon
Instructions
- Cut chicken thighs into 1-inch pieces and pat dry.
- Season with salt, pepper, onion powder, garlic powder, and 2 tsp Italian seasoning.
- Heat 2 tbsp oil in a large skillet over medium-high heat.
- Add chicken in a single layer and cook until browned and fully cooked.
- Remove chicken and set aside.
- Add remaining oil to the pan.
- Add zucchini, season, and cook until just tender.
- Add garlic and cook for 30 seconds.
- Return chicken to the skillet.
- Add lemon zest and juice, stir and heat through.
- Remove from heat and serve.
Notes
- Don’t overcrowd the pan to ensure proper browning
- Add garlic at the end to avoid burning
- Use chicken thighs for juicier results
- Add lemon juice last for fresh flavor
