Ingredients
2 lbs boneless skinless chicken breasts, cut into pieces
3 sweet potatoes, peeled and diced
5 cups broccoli or broccolini
3 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp salt
1/2 tsp black pepper
1 avocado (optional)
Hummus for serving (optional)
Fresh lemon juice (optional)
Instructions
1. Preheat oven to 425°F (218°C).
2. Toss chicken with olive oil and Cajun seasoning.
3. Toss sweet potatoes with oil, salt, and pepper.
4. Arrange chicken, sweet potatoes, and broccoli on sheet pan.
5. Roast for 25–30 minutes, flipping halfway.
6. Cook chicken to 165°F internal temperature.
7. Serve warm with avocado, hummus, or lemon juice.
Notes
Use two sheet pans if overcrowded.
Swap chicken for tofu if desired.
Store leftovers up to 4 days refrigerated.
