Description

This rhubarb crisp recipe features a sweet-tart fruit filling topped with a buttery oat crumble baked until golden and crispy. A simple and comforting dessert.


Ingredients

4 cups rhubarb, sliced (fresh or frozen)
3/4 cup sugar
2 tablespoons cornstarch
1 teaspoon cinnamon

1 cup all-purpose flour
1 cup oats
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup cold butter, diced


Instructions

1. Preheat oven to 350°F (175°C) and grease a baking dish.

2. In a bowl, mix rhubarb, sugar, cornstarch, and cinnamon until well coated.

3. Spread the mixture evenly into the prepared baking dish.

4. In another bowl, combine flour, oats, sugar, cinnamon, and salt.

5. Add cold butter and mix until crumbly.

6. Sprinkle the topping evenly over the rhubarb.

7. Bake for 35 minutes, until the topping is golden and the filling is bubbling.

8. Let cool for 10 minutes before serving.

Notes

Use fresh or frozen rhubarb. If using frozen, thaw and drain well to avoid excess moisture. Let the crisp rest after baking to thicken the filling.
