Description
This blueberry peach feta salad is fresh, sweet, and ready in minutes. Made with juicy peaches, blueberries, creamy feta, and a light dressing, it’s perfect for summer meals or quick lunches.
Ingredients
3 peaches (sliced)
1 cup blueberries
4 cups mixed greens
1/2 cup feta cheese (crumbled)
1/4 cup almonds (toasted)
2 tbsp red onion (sliced)
3 tbsp olive oil
1 tbsp honey
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
1. Toast almonds at 350°F for 5–7 minutes and let cool.
2. Wash and dry the greens thoroughly.
3. Slice peaches and red onion.
4. Whisk olive oil, honey, lemon juice, mustard, salt, and pepper.
5. Combine greens, peaches, blueberries, feta, onion, and almonds.
6. Drizzle dressing and toss gently.
7. Serve immediately.
Notes
Use ripe peaches and fresh blueberries for the best flavor. Assemble just before serving to keep the salad crisp. You can add grilled chicken or avocado for a more filling meal.
