Description

Soft, fluffy baked pancake bites made in a mini muffin tin — perfect for meal prep and busy mornings.


Ingredients

Scale
  • 1 ½ cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 tablespoons sugar

  • ¼ teaspoon salt

  • 1 ¼ cups milk

  • 2 large eggs

  • 3 tablespoons melted butter or oil

  • 1 teaspoon vanilla extract

  • Optional mix-ins (chocolate chips, blueberries, fruit)


Instructions

  • Preheat oven to 375°F (190°C) and grease a mini muffin tin.

  • Whisk dry ingredients together in a bowl.

  • Whisk wet ingredients in a separate bowl.

  • Combine wet and dry gently.

  • Fold in mix-ins if using.

  • Fill muffin cups ¾ full.

  • Bake 12–15 minutes until lightly golden.

  • Cool briefly before removing.

Notes

Store in the fridge up to 5 days or freeze for longer storage.
