Soft, tall bakery-style chocolate chip muffins that stay moist for days and come together easily in one bowl.
Ingredients

2 cups all-purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

2 large eggs

3/4 cup granulated sugar

1 cup milk

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups chocolate chips
Instructions

Preheat oven to 425°F and line muffin pan.

Whisk flour, baking powder, and salt.

Whisk eggs and sugar, then add milk, oil, and vanilla.

Fold wet ingredients into dry gently.

Stir in chocolate chips.

Fill muffin cups nearly full.

Bake 5 minutes at 425°F, then reduce to 350°F and bake 12–15 minutes.

Cool briefly before serving.
Notes
Do not overmix batter.
Store at room temperature up to 3 days or freeze for later.
