Description

Soft, tall bakery-style chocolate chip muffins that stay moist for days and come together easily in one bowl.


Ingredients

Scale
  • 2 cups all-purpose flour

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 3/4 cup granulated sugar

  • 1 cup milk

  • 1/2 cup vegetable oil

  • 1 teaspoon vanilla extract

  • 1 1/2 cups chocolate chips


Instructions

  • Preheat oven to 425°F and line muffin pan.

  • Whisk flour, baking powder, and salt.

  • Whisk eggs and sugar, then add milk, oil, and vanilla.

  • Fold wet ingredients into dry gently.

  • Stir in chocolate chips.

  • Fill muffin cups nearly full.

  • Bake 5 minutes at 425°F, then reduce to 350°F and bake 12–15 minutes.

  • Cool briefly before serving.

Notes

Do not overmix batter.

Store at room temperature up to 3 days or freeze for later.
