Description

A single batter transforms into three beautiful layers — sponge, custard, and base — with gentle baking and patience.


Ingredients

Scale
  • 4 large eggs, separated

  • 3/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted and cooled

  • 3/4 cup all-purpose flour

  • 2 cups milk, lukewarm

  • 1 tablespoon vanilla extract

  • 1/4 teaspoon salt


Instructions

  • Preheat oven to 325°F (160°C) and line an 8×8-inch pan with parchment.

  • Beat egg whites to soft peaks and set aside.

  • Beat yolks with sugar until pale; mix in butter and vanilla.

  • Add flour and salt, then slowly whisk in milk.

  • Gently fold in egg whites, leaving streaks.

  • Pour batter into pan and bake 50–60 minutes until lightly golden.

  • Cool completely, then chill before slicing.

Notes

Chill at least 2 hours for clean slices

Store covered in fridge up to 3 days
