Ingredients

1 ham bone or 2 cups diced cooked ham

2 cans (15 oz each) white beans, drained and rinsed

1 medium onion, diced

2 carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

6 cups chicken broth

1 bay leaf

1 teaspoon dried thyme

Salt and black pepper, to taste

Instructions

Sauté onion, carrots, and celery in olive oil until softened.

Add garlic and cook briefly until fragrant.

Add ham, beans, broth, bay leaf, and thyme.

Remove ham bone, shred meat, and return to soup.
