Description

A bold and balanced one-bowl meal with roasted sweet potatoes, seasoned ground beef, creamy avocado and cottage cheese, finished with spicy-sweet hot honey.


Ingredients

• 1 lb lean ground beef (93%)
• 2 medium sweet potatoes, peeled & diced
• 1 yellow onion, diced
• 1–2 tbsp olive oil
• 1 packet taco seasoning
• 1 cup cottage cheese
• 1 ripe avocado, sliced
• 2 tbsp hot honey
• ½ tsp paprika
• ½ tsp garlic powder
• ¼ tsp cinnamon
• Salt & pepper


Instructions

  • Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, spices, salt, and pepper. Roast 40–45 minutes.

  • In a skillet, sauté onion and then brown ground beef. Add taco seasoning and cook until fragrant.

  • Divide sweet potatoes into bowls. Top with seasoned beef.

  • Add avocado slices and cottage cheese. Drizzle with hot honey. Serve immediately.

Notes

Store beef and sweet potatoes separately in fridge up to 4 days.

Add hot honey and avocado when serving.
