Description
A bold and balanced one-bowl meal with roasted sweet potatoes, seasoned ground beef, creamy avocado and cottage cheese, finished with spicy-sweet hot honey.
Ingredients
• 1 lb lean ground beef (93%)
• 2 medium sweet potatoes, peeled & diced
• 1 yellow onion, diced
• 1–2 tbsp olive oil
• 1 packet taco seasoning
• 1 cup cottage cheese
• 1 ripe avocado, sliced
• 2 tbsp hot honey
• ½ tsp paprika
• ½ tsp garlic powder
• ¼ tsp cinnamon
• Salt & pepper
Instructions

Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, spices, salt, and pepper. Roast 40–45 minutes.

In a skillet, sauté onion and then brown ground beef. Add taco seasoning and cook until fragrant.

Divide sweet potatoes into bowls. Top with seasoned beef.

Add avocado slices and cottage cheese. Drizzle with hot honey. Serve immediately.
Notes
Store beef and sweet potatoes separately in fridge up to 4 days.
Add hot honey and avocado when serving.
