Description

A comforting one-pot soup made with tender chicken, vegetables, and a light creamy broth — perfect for cozy family meals.


Ingredients

1 lb chicken breast or thighs, diced
2 tablespoons olive oil or butter
1 onion, chopped
2 carrots, diced
2 celery stalks, sliced
2 cloves garlic, minced
3 tablespoons flour
6 cups chicken broth
1 cup milk or light cream
1 cup mixed vegetables (peas, corn, or green beans)
Salt and black pepper to taste
Fresh herbs (optional)


Instructions

  • Sauté onion, carrots, and celery in oil until soft.

  • Add garlic and chicken; cook until chicken is no longer pink.

  • Stir in flour and cook 1–2 minutes.

  • Gradually add broth, stirring constantly.

  • Simmer 20 minutes.

  • Stir in milk and vegetables.

  • Season and serve.
    Notes: Refrigerate up to 4 days. Freeze before adding dairy if needed.
