Ingredients
1 lb chicken breast or thighs, diced
2 tablespoons olive oil or butter
1 onion, chopped
2 carrots, diced
2 celery stalks, sliced
2 cloves garlic, minced
3 tablespoons flour
6 cups chicken broth
1 cup milk or light cream
1 cup mixed vegetables (peas, corn, or green beans)
Salt and black pepper to taste
Fresh herbs (optional)
Instructions

Sauté onion, carrots, and celery in oil until soft.

Add garlic and chicken; cook until chicken is no longer pink.

Stir in flour and cook 1–2 minutes.

Gradually add broth, stirring constantly.

Simmer 20 minutes.
