Description

A creamy chicken spinach casserole made with tender chicken, spinach, and a rich cheese sauce. Easy, comforting, and perfect for weeknight dinners or meal prep.

Ingredients

Scale

2 cups cooked shredded chicken
2 cups fresh spinach (or thawed frozen spinach, drained)
8 oz cream cheese, softened
1/2 cup sour cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 small onion, finely chopped
Salt and black pepper to taste
Pinch of nutmeg (optional)

Instructions

1. Preheat oven to 375°F (190°C).

2. If using fresh spinach, sauté until wilted. If using frozen spinach, thaw and squeeze out excess liquid.

3. In a bowl, mix cream cheese, sour cream, garlic, onion, salt, pepper, and nutmeg until smooth.

4. Add shredded chicken and spinach, then mix until fully combined.

5. Transfer the mixture to a greased baking dish.

6. Top with mozzarella and Parmesan cheese.

7. Bake uncovered for 25–30 minutes until golden and bubbling.

8. Let rest for 5–10 minutes before serving.

Notes

– Drain spinach well to avoid excess moisture.
– Use rotisserie chicken for a quicker version.
– Add mushrooms or pasta for a heartier dish.
– Store leftovers in the fridge for up to 3 days.
– Freeze for up to 2 months and reheat before serving.
