Ingredients
1 tablespoon olive oil
1 small onion, diced
1/2 red bell pepper, diced
2 handfuls fresh spinach
4 large eggs
1 cup whole milk
1 cup shredded cheese (cheddar or mozzarella blend)
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch baking dish.

Sauté onion and bell pepper in olive oil for 4–5 minutes. Add spinach and cook until wilted. Cool slightly.

Whisk eggs, milk, garlic powder, Italian seasoning, salt, and pepper.

Stir in cheese and vegetables.

Pour mixture into prepared dish.

Bake 35–40 minutes until center is set but slightly jiggly.

Rest 10 minutes before slicing.
Notes
Store in refrigerator up to 4 days.
Freeze individual slices up to 3 months.
