Description

A simple, family-friendly crustless quiche made with eggs, milk, cheese, and fresh spinach. Perfect for brunch, meal prep, or a light dinner.


Ingredients

1 tablespoon olive oil
1 small onion, diced
1/2 red bell pepper, diced
2 handfuls fresh spinach
4 large eggs
1 cup whole milk
1 cup shredded cheese (cheddar or mozzarella blend)
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9-inch baking dish.

  • Sauté onion and bell pepper in olive oil for 4–5 minutes. Add spinach and cook until wilted. Cool slightly.

  • Whisk eggs, milk, garlic powder, Italian seasoning, salt, and pepper.

  • Stir in cheese and vegetables.

  • Pour mixture into prepared dish.

  • Bake 35–40 minutes until center is set but slightly jiggly.

  • Rest 10 minutes before slicing.

Notes

Store in refrigerator up to 4 days.

Freeze individual slices up to 3 months.

Reheat gently in oven for best texture.

Ensure vegetables are drained well to avoid excess moisture.
