Description

A hearty, one-pot soup inspired by classic cabbage rolls, made simple for busy weeknights.


Ingredients

  • 1 lb ground beef

  • 1 small green cabbage, chopped

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 can crushed tomatoes

  • 1 can tomato sauce

  • 6 cups beef broth

  • 1/2 cup uncooked white rice

  • 1 tsp paprika

  • 1 tsp dried oregano

  • Salt and black pepper to taste

  • 1 tbsp olive oil


Instructions

  • Brown beef and onion in olive oil.

  • Add garlic and spices; cook briefly.

  • Stir in tomatoes and sauce.

  • Add broth, cabbage, and rice.

  • Simmer covered 30–40 minutes.

  • Adjust seasoning and serve.

Notes

Stores well for 4 days refrigerated.

Add broth when reheating if thickened.
