Description

Ingredients

  • 2 teaspoons baking powder

  • 2 large eggs

  • 3/4 cup granulated sugar

  • 1/2 cup milk

  • 1/3 cup vegetable oil or melted butter

  • 1 1/2 cups blueberries

  • 8 oz cream cheese, softened

  • 1/3 cup powdered sugar


Instructions

  • Preheat oven to 375°F and line muffin pan.

  • Mix cream cheese and powdered sugar until smooth.

  • Whisk dry ingredients in a bowl.

  • Whisk eggs, sugar, milk, oil, and vanilla in another bowl.

  • Combine wet and dry ingredients gently.

  • Fold in blueberries.

  • Layer batter and cream cheese filling in muffin cups.

  • Bake 18–22 minutes until set.

  • Cool before serving.
