Ingredients

  • 2 cups cottage cheese

  • 3 large eggs

  • 1 1/2 cups blueberries (fresh or frozen)

  • 3 tablespoons honey or maple syrup

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon

  • Zest of 1 lemon (optional)

  • 1/3 cup rolled oats or almond flour

  • 1/4 teaspoon salt


Instructions

  • Preheat oven to 350°F (175°C) and grease baking dishes.

  • Whisk cottage cheese and eggs until mostly smooth.

  • Stir in sweetener, vanilla, cinnamon, lemon zest, and salt.

  • Fold in oats or almond flour.

  • Gently add blueberries.

  • Pour into dishes and bake 30–40 minutes until just set.

  • Rest 5–10 minutes before serving.
