Ingredients

1 1/2 cups cottage cheese

1 cup chopped vegetables (spinach, peppers, onions)

Instructions

Preheat oven to 180°C (350°F) and grease a baking dish.

Whisk eggs until just combined.

Stir in cottage cheese.

Fold in vegetables, cheese, and seasonings.

Pour into dish and bake 35–45 minutes until just set.

Rest 10 minutes before slicing.
Notes
Store leftovers in the fridge up to 4 days.
